Recipe 6

 (Autumn Calabrese inspired recipe)
2 sliced pears
1 tsp ground cinnamon
1 cup almond flour
1/2 cup coconut flour
1/2 cup unsweetened almond milk
3 large eggs
1 tsp pure vanilla extract
1 1/2 whey protein powder vanilla flavor
1. Combine pears and cinnamon in a medium bowl and set aside
2. Combine almond flour and coconut flour in a medium bowl , mix well and set aside
3. Place almond milk, eggs, extract and protein powder in a blender, blend until smooth and place in a large bowl
4. Combine flour mixture with the almond milk mixture and mix well. You may have to add some water to make the batter smoother .
5. Heat non stick skillet sprayed over medium low heat
6. Put 1/4 cup of batter on the skillet and cook for about 3 minutes . Loosen pancakes from skillet with the spatula , flip over and cook for additional 1 and a half minutes.
7. Continue with the remaining batter
8. Serve pancakes topped evenly with pear and cinnamon mixture.
