Recipe 2


(Makes4-6 small patties, serving size 2 patties)

1/2 zucchini, washed and grated
2 Tbs minced onion
1 large egg lightly beaten
1/2 tsp salt
1/2 tsp freshly ground black pepper
2 Tbs olive oil

Grate zucchini and squeeze out all excess water. Put zucchini in the medium mixing bowl. Add onion, salt and pepper. Heat the oil in a cast iron or other heavy skillet over medium-high heat. When the oil is hot but not smoking, drop about 2 Tbs of zucchini mixture to the skillet. Do not turn pattie until completely browned and firm on the bottom. Turn once and cook other side until completely browned. Remove pattie to paper-towel lined plate.
